Very similar to fresh cheese. It is a cheese rennet coagulation.

It is more friable and softer than fresh cheese. White and lime in colour and the skin becomes straw-colored when the cheese is aged. The product should be consumed within three months of its produzione. The weight of forms range from 1 kg to 2 kg.


Given the fragrance of the cheese, it is a great cheese to be enjoyed on its own. It goes well with acidic notes like tomato or balsamic vinegar and with white wines having character.
