It a rennet coagulation matured cheese.

The skin has a dark straw color and can be covered with mould. The cheese is consumed after at least 4 to 5 months of production (this period varies according to the size of the forms) .The weight of the forms varies from 1.5 kg to 3 kg.

Uses:
Enjoy the cheese flakes accompanied with honey or jam that can soften the very pronounced flavour.

A full-bodied red wine or a dark or double malt beer are excellent companions for this cheese.
